recipe: salmon linguine

My sister offered this recipe to me years ago. She knows the sibling of the chef at Sundance restaurant.

Ooh, it's tasty. And quick. For one of those nights where you've been gone all day, but still want something healthy.

Salmon Linguine
4 garlic cloves {I used minced garlic from a jar}
1/4 cube butter
1/8 cup olive oil
1-1 1/2 pounds salmon
1 package linguine noodles
1 package/jar of pesto {I imagine it would be even better with homemade pesto}
1/2 cup grated Parmesan

Saute garlic in butter over medium-high heat. Add salmon, salt and pepper lightly. Shred salmon as it cooks. Set aside.
Boil linguine in water til al dente. Drain and rinse with water. Toss with olive oil.
Add salmon/garlic mixture, Parmesan cheese and pesto sauce to linguine. Toss to coat.

Enjoy! {with a fresh baguette and a salad}
