Breakfast Crepes "skinny pancakes"
Mix:
2 eggs
1 1/4 c. milk
1/4 c. vegetable oil
Add:
1 t. baking powder
2 T. sugar
1/2 t. salt
1 c. flour
Stir well, until there are no lumps. Pour 1/3 cup of batter into heated well greased pan and swirl pan to form flat circle. When edges start to curl and bubbles appear flip and cook second side until golden. Garnish as desired.

I LOVE crepes.. and the orange ones in the photo look great. (We actually did sweet and savory crepes for Valentines Day.)
ReplyDeleteJust had crepes yesterday--with homemade whipped cream and lemon curd. Yum! Next time...Nutella and bananas...oh and cream too!
ReplyDeleteOur family loves crepes, except we call them thins. We pour evaporated milk and sprinkle sugar over them. Then we roll them up with a fork. It is very good. My husband doesn't like it very much but my daughter loves it!!
