Kelli's post about lemonade made me think about what I love to eat with lemonade. Immediately, I thought of chocolate chip cookies. Yum. The recipe below is sure to be loved by any/everyone. It's all natural ingredients too without any refined sugars, eggs or bleached flours {making it totally healthy to eat the dough, my favorite part}.
1 1/2 Cups rolled oats
1 Cup whole-wheat flour
1 Cup chocolate chips
1/2 tsp salt
1/4 tsp baking soda
1/2 Cup safflower oil
1/2 Cup pure maple syrup
2 TB. water
2 tsp vanilla extract
Preheat oven to 350 degrees.
Place oats, flour, chocolate chips, salt and baking soda in a large mixing bowl. Stir with wire whisk to combine.
In a small bowl, place oil, maple syrup, water and vanilla, and beat vigorously with a wire whisk until emulsified. Stir into oat mixture and mix just until everything is evenly moistened.
Let rest 5 minutes.
Drop slightly rounded tablespoons of dough onto baking sheets, about 1 inch apart. Dough will be a bit crumbly. Flatten with your hand to 1/3-inch thick. Smooth edges to make each cookie uniformly round, gently pressing dough so cookies hold together. Bake until lightly brown.
Store in air-tight container in refrigerator.
Enjoy with a tall glass of lemonade {possibly by the pool?}

I too love eating the dough- this is great, no eggs so I don't have to worry about getting sick!
